Many of these displaced Jewish families then settled in the Pitigliano area and built a vibrant community in this part of the country, bringing with them their baking traditions and skills.

These sfratti sweets emerged from this culture and were traditionally prepared by this community of Italian Jews to celebrate the holiday of Rosh Hashanah and commemorate their past struggles by making something delicious that looked like a terrible thing from their history.
